Customer To sign Note but not Deed?????

Does anyone have a lender that will allow a customer to sign Just the bank note, but not the mortgage/deed.

Customer owns a construction company and has to put up his personal assets as collateral. Therefore he does not want to be on title. He has done this a few times with local banks but never a wholesale lender. Any help would be appreciated.
